Need ideas.......

What is your very best "company" main-dish casserole?  Not fond of mushrooms or many seafoods, so would prefer something else.  I'd love to hear some of your ideas (and a link to the recipe or a description of it in your comment)!   I'll be back here in a day or two with a regular post with photos.

omy...we don't eat many casseroles..although Rich makes a good Enchilada dish which can be made ahead and heated when needed..I also have my daughters Chicken Enchilada recipe available...Sorry I can't help more...

Lasagna! It's easy and can be made ahead of time if necessary!

Eggplant casserole is my favorite. You can find recipes on the Net, tons of them. I sometimes add chopped chicken breast for those who want a taste of meat.

This is a loaded question...is it mainly serving younger ones who might like pizza casserole....super easy!!!

Then there is the chicken enchilada casserole that is always a favorite.

Lasagna always seems to be a hit.

Then I make a hot dog casserole or even a Shepherd's Pie.

Have you looked at the website called AllRecipes.com? They offer some really yummy ones!!

Cheesy Beef Casserole
From Gooseberry Patch
Cheesy Beef Casserole
1/2 lb. ground beef
1/4 c. onion, chopped
1/4 c. celery, chopped
1 t. salt
1/8 t. pepper
4 c. bread, cubed
3 T. butter, melted
2 eggs, beaten
1 c. milk
1 c. shredded sharp Cheddar cheese
Brown ground beef, onion, celery, salt and pepper together; drain. Combine with remaining ingredients; spread in a greased 2-quart casserole dish. Bake at 350 degrees for 35 minutes; let stand 5 minutes before serving. Serves 4.

Does it have to be a casserole? Can it be a one pot meal, instead? I have a recipe for a turkey sausage and pepper stir fry with penne pasta that is both a family and company favorite!! :)

Hi Pat! Hope you are having a wonderful Saturday. When I moved here to the south, I found that everyone here seems to love, love, love macaroni and cheese. It always seems to be a big hit. Friends have also said they like my Homemade chilli in a crock pot with a side of cornbread.

Also Enchilada casserole is very easy to make it. I got the recipe years ago from my husband's Aunt Carol. I take tortilla chips and crumble them up in the bottom of a big casserole dish and then layer it with ground beef seasoned with Mexican spices, green chilis, onion, chopped tomato, sliced olives, sour cream, cilantro and the secret ingredient: Campbell's cheddar cheese soup, right out of the can. Then a little bit of cheddar cheese and more chips, layer like a lasagna. Bake at 350 until it is hot and bubbly.

Paula Deen has some wonderful casserole recipes and there is a book put out by Taste of Home called "Church Suppers" that has some really nice recipes too. Hope this helps! With Love Delisa :)
